Daikon and Cucumber: My Fat Blaster Salad

My Fat Blaster Salad

Cucumber
Daikon Radish
Carrots
Fresh Garlic Cloves
Onion
Rice Wine Vinegar
Gochujang (Korean Red Pepper Paste)

Slice or julienne the veggies then mix in vinegar and red pepper paste. I omitted measurements because this salad is really simple and the vinegar and gochujang should be used according to your taste.

I love this salad; it's really tasty, it's healthy and it is a great fat blaster. Listed below are just some of the health benefits of each ingredient.

Daikon Radish - Radishes are a great detoxifier and anti-inflammatory with its  high water content along with being a good source of fiber. They are also low in calories and have a low glycemic index. Radishes are also known to boost metabolism.

Cucumber - The soluble fiber in cucumbers dissolves into a gel-like texture in your gut, which helps to slow down digestion and keep you feeling full longer. It is also low in calories and high in water content which helps flush toxins from the body.

Carrots - In keeping with the theme of these ingredients, carrots bless us with fiber and water. Carrots are also great for regulating the amount of insulin and glucose that is being used and metabolized by the body. Carrots are rich sources of potassium, a vasodilator, which is good news for your blood pressure.

Garlic - Make sure you let this jewel sit for awhile before using to increase it health benefits. Garlic has long been known as an anti-inflammatory and research is showing that it may actually help to regulate the number of fat cells that get formed in our body. Garlic is also a good source of selenium which helps to defend against free radical damage and maintaining a healthy metabolism.

Onions - Onions contain chromium, which helps to regulate blood sugar. Also great for reducing inflammation, helping to produce good cholesterol - yay for heart health! Also, onions are no slouch when it comes to fiber and water.

Gochujang - Korean Red Pepper Paste, a staple in the Korean kitchen, is a fermented condiment which adds something special to any dish. Gochujang contains capsaicin, a powerful chemical known to increase the metabolism and fat burning processes. The big deal about this condiment however, is the fact that it is fermented. Fermented foods add to the good bacteria needed in the gut to improve digestion and fight off toxins and maintain a healthy metabolism.

Rice Vinegar - Contains zero calories but tons of flavor. Having great flavors in your food is a must to maintain a healthy diet without feeling like your being deprived.​

​I love this salad; it's quick and easy to make. I julienned my veggies but slicing, dicing or chopping them is good too. It's a great side dish for most entrees about also good on it's own for lunch or a snack. Try it and tell me what you think.
