Below is a video demonstration of a recipe that I want to share with you. The video was completely unplanned and done on the fly with no editing therefore, I've also written out the recipe for you below along with some information about the ingredients which I think are fascinating. UNROASTED TOMATOES This is a very simple recipe that is easy to prepare with very few ingredients. It’s not completely raw because the chipotle pepper flakes that I used are roasted, however the amount used is very small so for me it’s still consider a raw recipe. The flavor of this dish is very big and bold just like it’s nutritional value. Listed below is the recipe along with some helpful information about the ingredients used. Ingredients 3 med. Tomatoes 2 cloves Garlic 1 tsp. Kala Namak (Black Salt) 1 tsp. Chipotle Pepper Flakes Dice or mince garlic first and set aside; then dice tomatoes, put into a bowl and add remaining ingredients. Mix and enjoy. Kala Namak (Black Salt) is an Indian volcanic rock salt from South Asia and is commonly used in Indian cooking. Black salt has a somewhat strong sulfuric smell, much like boiled eggs and a savory flavor. The salt really is a black but you find some that have purple or pinkish hue, moreso than black. This coloring comes from its mineral composition. Once I used black salt to flavor the water in which I was boiling potatoes. The water turned black when the salt was added but it did not discolor the potatoes at all. I was amazed. Nutritionally Kala Namak is a digestive aid known for relieving flatulence and heartburn. It is typically lower in sodium than other salts which can be helpful to those on a low salt diet. Of course check with your doctor first. Chipotle Peppers adds a taste you won’t forget. These pepper flakes are very spicy so use according to your taste. Hot peppers are great for weight loss and detoxification because they raise your body heat by increasing your metabolism. The active component of peppers is capsasin which is found in the seeds of peppers and in the pith, which is the white membrane the seeds are attached to inside of the pepper. Capsasin acts as an analgesic or pain reliever in the body and is also great for inflammation. Garlic, the powerhouse of this dish. Just about everyone knows that garlic is a very healthy food. Personally, this is one ingredient that I label without hesitation as medicine. Research shows that garlic is helpful at reducing blood pressure, fighting colds and flu, decreasing inflammation in the body, improving cholesterol levels, lowering the risk of heart disease, and it helps detoxify the body of heavy metals. Did I mention that garlic is a powerhouse? The active component of garlic is called Allicin. Allicin is activated only after the garlic has been chopped or cut and given a few moments to sit. It is no longer active after cooking but that does not erase all of garlic’s healthy benefits. If you’re not eating garlic on a regular basis, start now. Tomatoes, so I can’t leave out information on the main star of this recipe. Tomatoes are loaded with lycopene, free-radical fighting antioxidant, Vitamin A, C, K, and folate. Tomatoes have a high water content, 2 grams of fiber per serving and are a good source of chromium which helps regulate blood glucose. Tomatoes are high in bioflavonoids and carotenoids, which are known anti-inflammatory agents. As I mentioned in the video, this is one of my favorite recipes because it’s quick and easy. It serves as a great side dish but also a tasty snack. Try it and tell me what you think.
